Enoki Mushroom with Thai spicy Larb salad
Ingredients
1. Enoki mushroom from ProMushroom
2. Lime
3. Shallot
4. Parsley
5. Spring onion
6. Coriander
7. Water
8. Sugar
9. Chili powder
10. Fish sauce
11. Roasted ground rice
Method
1. Cut the Enoki mushroom into 4 pieces.
2. Boil the Enoki mushroom for only 10-20 sec.
3. Season with lime, fish sauce, sugar and chili powder.
4. Add shallot, parsley, coriander and roasted ground rice and whisk it together.
