1. Crack and beat the eggs, then add Enoki mushroom and whisk together with the eggs.
2. Heat the oil over medium heat and add the egg.
3. Cook the egg mixture until one side is set and top with mozzarella cheese. Then fold half of the egg.
4. Flip over to melt the cheese.
